My Personal recommendation is The Penticton Ramada. It has a beautiful atmosphere and a poolside bar and grill.
The Lakeside Resort is Penticton's only waterfront Hotel, complete with a casino, restaurant & lounge.
If your looking for a B&B I would recommend the Casa Grande Inn.
